Tomato Mixture

Things You’ll Need

  • 6 or 7 ripe Roma (plum) tomatoes

  • 1/3 cup grated Parmesan cheese

  • 1/3 cup basil, thinly sliced (chiffonade)

  • 2 tablespoons extra virgin olive oil

  • 2 cloves garlic, finely minced

  • 2 tablespoons balsamic vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

Ingredients for homemade bruschetta

Step 1

In a small skillet over medium-low heat, warm the oil. Add the minced garlic. Cook until golden, about 45 seconds to 1 minute, making sure it doesn't burn. Let cool completely.

Step 2

Dice the tomatoes, keeping the seeds and juices. This will help deepen the flavor of your finished bruschetta.

If you have leftover tomatoes, simply slice and toast another loaf of French bread. You can also eat it with pasta, pair it with chicken or toss it into a salad.

While you're at it, don't discard the juices! Mop it up with extra bread for a fresh and garlicky appetizer.
